I am on a crock pot KICK! I have 2 fun recipes to share.. one that I cooked last week. And one that I have cooking up right now. Both are from Pinterest actually. Are you surprised? Im not.
The first was a Beef Stroganoff. Basically it consisted of 2 lbs of cubed steak, a block of cream cheese, a large chopped onion, 2 cans of golden mushroom soup, a couple tablespoons of worcestershire sauce, and salt and pepper.. all cooked together for 6-8 hours on low (except for the cream cheese.. which you cube up and add in during the last 30 minutes). I served it over mashed potatoes and it was really yummy! It was even better as leftovers because it thickened up overnight.
The meal that Im cooking today for Valentines is a mexican dish. It's 1lb of chicken tenderloins (frozen or thawed), a can of drained and rinsed black beans, a can of drained corn, a jar of salsa, and a block of cream cheese. All thrown in together and cooked on low for 6-8 hours. It smells fantastic. I think Im going to serve it over rice or tortilla chips with a little cheese sprinkled on top.
I know what your thinking right now.. that I must have done a search for recipes that contained cream cheese. Its not true! It's just a coincidence I assure you :) However, it MAY have been the deciding factor as to whether or not I would pin it and add it to my own boards.
Overall the last week has been very uneventful. I went home for a couple of days to help out my dad with Clara. Seth and my Mom went to Maryland to go to my brothers bi-monthly brain scan so dad and I were left to take care of the munchkin (until Mary got off work that is)!
This past weekend, we went to a Gwinnett Gladiators hockey game with some friends on Saturday.. but other than that, there was just a lot of unpacking and organizing that got tackled.
Im trying to accomplish as much as I can before the end of the week. On Friday, I'm heading to Austin for the week to take care of the twins while the rest of the family heads off to Hawaii. Rough, huh?? Im really excited to see Karen, Weston, and the twins though! I think we're going to have a fun week.
Well, I better run. I've got muffins cooking and my crock pot meal needs a quick stir. Is this what staying at home feels like? Ahh.. the life of luxury. I could certainly get used to it! Blog, cook, eat, nap, occasional trip to the gym. Repeat.
